What’s worth highlighting here is that this print is from 1917, a year before the end of the First World War. The idea was that American civilians would have to modify their eating habits voluntarily (meatless Mondays, wheatless Wednesdays) so that more food was available to ship to troops and allies overseas. Today we apply these rules selfishly, it is considered bourgeois to eat locally when we could just as easily apply a similar initiative to serve food deserts in under served communities. Why does it take a war? #Rumbleeconomics
